Jack's Raw Birthday Cake

To celebrate Jack's birthday, I made him a raw food birthday cake. Dates choc slice.

This frozen treat is rich, a spoonful each was enough to share these quantities around with 14 people.
All ingredients listed are organic.

Ingredients:

Wet Top mix
300g of medual dates
100g of figs
5 sprigs of mint

200g of macadamia nut butter.
1/2 cup of sunflower seeds.

Dry Base Mix
2 cups of spelt flour
100g of grated dark chocolate
1 heaped teaspoon of wattle seed
2 tablespoons of carob powder
4 cups of Amaranth
1 finger of melted butter (optional)


Protocol:
Soak the dates and figs in water for 20-30 minutes. While they were soaking, I removed the pits and stems.
Chop the mint finely.
After soaking, separate the liquid, putting it aside. Then thoroughly blend together.

In a mixing bowl add the dry ingredients and mix completely - melt the butter and add that if wanted then slowly add the date water until the consistency is is sticky and good.

Layer the Dry base mix evenly in a freezer safe container. Spread the macadamia nut butter over this - a bit of butter can help with the sticking. Then layer the wet mix and finally the sunflower seeds.

Place in the freezer until you can't wait to try it

(remember to lick everything the ingredient's have touched.)
