BROWN RICE PUDDING

RICE PUDDING


Soak brown rice overnight in just enough water to cover.

Brown rice 1/3 cup per person

Coconut milk

Sultanas

Nutmeg

2 teaspoons ground


Cinnamon

Desiccated coconut

¼ cup

½ cup




Rinse brown rice and transfer to cooking pot, adding remaining dry ingredients and give a good mix up.


Add water , about a finger knuckles depth above the rice.

Bring to boil, then cover with tight fitting lid and cook on low-med for 20 mins.


Check if cooked – if not continue cooking on low.


Stir can of coconut milk through 5 minutes before serving.
