We are what we eat...

In PC we are taught that it is very important to start practicing at home where we have control over systems that are in scale with the individual or group that lives there.  If this is where we should start, then I believe it is the kitchen that is the 'heart' of the system that pumps and drives us to practice these PC principles.

What is the point of having vegetable gardens and fruit trees if we don't properly harvest these gifts and process/prepare them in ways that we can ingest them for maximum nutrition and enjoyment.  In the Western world we have lost touch with growing food but we have also stopped cooking it as well.  Preparing food has become a burden as oppose to a celebration.  Hence the huge market of conveince foods.  Cooking food that is organically and sustainably grown is a major component that needs to be addressed in order for soceity to change and appreciate why we need to grow and practice permaculture principles.
